In the properties window, switch to the "Details" tab, scroll down a bit, and you'll see the "Total Editing Time" entry. And that's all there is to it! It's a handy little feature.
Yes. Word will give you version history, as well as date created and date last modified, total time spent editing, and maybe other things I can't think of right now. See for yourself: Open the document in Word, and then do File->Info. There you can see the dates and editing time.
