You won't be able to rename them in the Ruler Designer menu but you will be able to edit their names from the character window if they are still children.
Do charinfo to see name of your realm and save game uncompressed then open the save file (it's probably in documents/paradox interactive/crusader kings ii) with notepad+ though notepad is fine, press ctrl f and search your realm's name then change it in the base title.
