To print with only the color cartridge simply remove the black cartridge and set it aside. The printer will automatically switch to ink backup mode, printing black and color using only the color ink. See page 52 of the user manual here for more information.
You can disable the ink sensor by pressing and holding the red Stop button for 5-7 seconds. This should allow you to continue printing, although printing with an empty ink cartridge will damge the printer over time.
Go to your Windows Search Bar. Type Control Panel. Double click the Devices and Printers section. Right-click the icon of your printer and choose Printing Preferences. Choose Grayscale or Black and White in order to print in black ink only.
If your machine's cyan, magenta, or yellow toners run out, you can choose Mono in the printer driver to allow you to keep printing. You'll be able to keep printing until the black toner runs out. When the black toner runs out, you won't be able to print until you replace it.
Simply hold the printer's stop/reset button for 20 seconds. If you're unsure which button this is, see the image below. Once this is done you should no longer get updates about your ink levels (if you are still seeing them, try turning your printer off and on after you've reset it).

If you want to continue printing, you can disable the function for detecting the remaining ink level. To disable this function, press and hold the printer's Stop button for at least 5 seconds, and then release it.
Whether you use an HP printer or any other, you can make it possible to print in black while your printer screen is showing the color cartridge empty notification. All you need to do is reset your printer first and then, make certain print settings i.e open the option of “Print in Grayscale”.
