At a minimum, minutes should include: Name and kind of meeting. Date, place, and time that the meeting began and ended. Names of the chair and secretary or their substitute. Names of voting members attending and whether a quorum was present. Names of guests and their subject matter.

One possible solution is to check if the notes are saved in the meeting request itself. To do this, please open the meeting request in your calendar and click on the "Meeting Notes" button in the ribbon at the top of the screen then check if your notes are still there.
In Teams, meeting notes can end up in OneNote, linked to the meeting chat, or stored within a Teams channel if it is a channel meeting.
