ing to both the U.S. Food and Drug Administration and the U.S. Department of Agriculture's Food Safety and Inspection Service, refrigeration at 40° F or below is one of the most effective ways to reduce risk of foodborne illness.

A temperature log is documentation of temperatures that food products are exposed to during different stages of food production. This can include everything from the temperatures of food items during storage, transport, and even cooking!

You will need thermometers in order to measure temperatures at each stage of the food operation (from receipt, through storage, to cooking). Fridge thermometers may be used to check refrigerator and freezer temperatures, whilst probe thermometers may be used to measure hot food temperatures.

Before use, ensure the thermometer is clean and dry. If using a probe thermometer, ensure the probe has been sanitised. Place the probe into the food and wait until the temperature reading has stabilised before reading. Measure different parts of a food as the temperature may not be the same in all parts.

This can be done by using a thermometer or an automated temperature control system. As a good precaution, the preinstalled thermometer within your freezers should be continuously monitored and you should use an external one for authentic readings.
