They are listed from most acidic to least: lemon juice (pH: 2.00–2.60) limes (pH: 2.00–2.80) blue plums (pH: 2.80–3.40) grapes (pH: 2.90–3.82) pomegranates (pH: 2.93–3.20) grapefruits (pH: 3.00–3.75) blueberries (pH: 3.12–3.33) pineapples (pH: 3.20–4.00)

Under U.S. regulations for hermetically sealed foods, a low-acid food means any food, other than alcoholic beverages, with a finished equilibrium pH greater than 4.6 and a water activity (aw) greater than 0.85.

Acidified foods are foods such as salsas, pickles, relishes or hot sauces. Usually, acidic foods like vinegar, citric acid or commercially canned tomatoes are added to the product to create an acidic environment that limits bacterial activity.

In this document standardized and non-standardized food dressings, such as mayonnaise, and condiment sauces, such as ketchup, are considered acid foods, which have a natural pH of 4.6 or below.

A low-acid canned food (LACF) is any food (other than alcoholic beverages) with a finished equilibrium pH greater than 4.6 and a water activity greater than 0.85, excluding tomatoes and tomato products having a finished equilibrium pH less than 4.7.

All vinegars have a low pH, making them acidic.
