Photos is organized into Library, For You, Albums, and Search. When you turn on iCloud Photos, your collection is kept up to date across your devices. And using advanced search features, you can easily find photos of a person, place, object, or event.

You can sort the photos inside the albums automatically, if you have iOS 14 or later installed. But the only way to arrange the albums in an alphabetical order is to tap Edit, then drag the albums into the order you want.

Setting up year folders and subfolders is fast, easy, and kind of foolproof. You can't really mess it up. Now select all the images that were taken in a given year and move them to the corresponding year folder. I recommend sorting your images by date to do this step.

If you're still unable to sort or select a photo to use as an album cover, please make sure there's more than one photo in the album. If needed, try multiple albums. If you still don't see the More button, please make sure you're using iOS version 14.6.
