Calculated fields can be defined using Adobe Sign text tags, using the Adobe Sign web application, or using PDF form fields. When using the Adobe Sign text tags or PDF form fields to define calculated fields, the expression for the calculation is defined using a directive called calc.

To create a calculated column in a table within the Power Pivot data model, first select the tab of the table in the data model window. Then click into the topmost cell within the Add Column column at the far right end of the table. Then enter the formula you want the column to calculate into the cell.

BUT, if you make a dynamic range on the table and create a new pivot table that references the dynamic range of the table instead of the table itself, the calculated field will not be grayed out.
