Every year since 1967, the greatest chili cooks descend upon the ghost town of Terlingua, Texas. The once budding mining community is now little more than a few abandoned buildings but turns into a metropolis of chili aficionados for the first Saturday in November.

Frank Tolbert and Smith began a war of words in the press about chili. The challenge was finally accepted by Wick Fowler, Chief Cook for CASI. In October 1967, at the ghost town of Terlingua, Texas, the first known World Championship Chili Cookoff took place.

History of the Original Terlingua Chili Cook Off The first cook-off in 1967, created and promoted by Frank X. Tolbert and friends, only had two cooks, New Yorker, H. Allen Smith, and Texas legend Wick Fowler. It was supposed to settle the dispute over who knew more about chili - Texans or New Yorkers.

In October 1967, at the ghost town of Terlingua, Texas, the first known World Championship Chili Cookoff took place. The object was to determine who was the best chili chef in the whole world. H. Allen Smith and Wick Fowler were pitted against each other.

A chili cook-off is a social event, similar to a barbecue, in which competitors prepare their own particular recipe for chili con carne and submit it for taste testing.
