The Celiac Disease Foundation, established in 1990, is a leading global patient advocacy organization committed to accelerating diagnosis, treatments, and a cure for celiac disease.

Protease is the enzyme that helps our body process proteins, but it can't completely break down gluten. Undigested gluten makes its way to the small intestine. Most people can handle the undigested gluten with no problems. But in some people, gluten can trigger a severe autoimmune response or other unpleasant symptoms.

Contamination is not the only problem, however. Some people with celiac disease will experience inflammation after eating oats, even if they follow a gluten-free diet. This is because oats contain avenin, a protein that plays a role similar to gluten in wheat.

In the past, oats (avenin) were believed to be toxic to individuals with celiac disease and were not allowed in the gluten-free diet. However, recent evidence has shown that oats are safe for consumption by most individuals with celiac disease.

Indeed, gluten contamination of oat occurs frequently. Typically, commercially available oats are not suitable in a gluten-free diet for celiac patients due to their routine contamination with wheat, rye, or barley.

Since most oats sold in North America are processed near or with grains that contain gluten, the oats too may contain some gluten. Pure oats are gluten-free. Words to look for on a package of oat products are: “gluten-free oats”, “pure, uncontaminated oats” or “certified gluten-free oats”.

They're a great way to add dietary fiber to your diet and a wonderful low glycemic load for breakfast, a snack or baking. At last, oats that people with celiac disease or gluten intolerance can enjoy, too!

People with celiac disease can rest assured that foods labeled 'gluten-free' meet a clear standard established and enforced by the FDA,” says Carol D'Lima, food technologist with the Office of Nutrition and Food Labeling in the FDA's Center for Food Safety and Applied Nutrition.
