They differ in roles. The lateral roots are roots that spread for two purposes - to gather water and nutrients and to anchor the plant while root hairs are primarily to increase the surface area of the roots to gather water and minerals faster.

For example, S-type lateral roots in rice root system may act as long-lived super root hairs (Fig 5B-C), increasing the root surface area and nutrient uptake while at the same time being carbon-cost efficient compared to the large L-type lateral roots [90].

Lateral roots are essential for soil foraging and uptake of minerals and water. They feature a large morphological diversity that results from divergent primordia or root growth and development patterns.

They differ in size. Lateral roots are larger and composed of layers of cells while root hairs are only sever cells thick. They have different life spans. Lateral roots keep on growing with a root cap at the end as long as the soil would allow it while root hairs could die easily.

Tap or primary roots arise as a continuation of the embryonic radicle tissue and persist into maturity. Secondary roots (also called lateral roots) arise from the primary root, and tertiary roots arise from the secondary.

Lateral roots increase the volume of soil reached by the root, provide anchorage, and participate in water and nutrient uptake and transport. The number and location of lateral roots depends on their continued initiation and, collectively, is a major determinant of root system architecture.
