FSIS provides inspection at Federal facilities for meat, poultry, and egg products, as well as voluntary inspection for animals not covered under mandatory inspection regulations such as buffalo, rabbit, and deer.

An inspection mark on the label lets you know the meat or poultry product has been inspected and that it is safe, wholesome, and correctly labeled.

USDA applies the official mark of inspection to all meat and poultry products produced under federal inspection. The mark contains the federal inspection number of the facility that produced the product.

In Canada and the United States the stamp on a beef carcass is simply its grading or a seal of safety. It shows that it has been inspected and is fit to process for human consumption.

The USDA regulates the production of meat, poultry and egg products. USDA-regulated businesses are required to have a USDA inspector onsite at all times. The FDA regulates the production of everything else (non-meat foods, unusual meats, and fish products). No inspector is required onsite during production.

Once a carcass has been evaluated, the USDA grader stamps the carcass with the quality grade and yield grade. The stamps are generally placed on the short loin of the carcass. Stamps let the grade chain operator know how to group the carcasses in the cooler.

Meat that has been federally inspected and passed for wholesomeness is stamped with a round purple mark. The dye used to stamp the grade and inspection marks onto a meat carcass is made from a food- grade vegetable dye and is not harmful. (The exact formula is proprietary/owned by the maker of the dye.)

FSIS protects the public's health by ensuring that meat, poultry and egg products are safe, wholesome and properly labeled. FSIS is part of a science-based national system to ensure food safety and food defense.

The U.S. Department of Agriculture's Food Safety and Inspection Service regulates aspects of the safety and labeling of traditional (non-game) meats, poultry, and certain egg products.
