Tomato undergoes six developmental stages of fruit ripening: green, breaker, turning, pink, light red, and red ripe. Tomato fruit ripening is escorted by fruit softening, changes in color from green to red, and increased levels of flavor and aromatic compounds such as sugars, volatiles, and organic acids.

The general answer is that tomatoes ripen faster on the vine – IF they have the optimal climate and growing conditions. However, there are times that we want them to do this even faster.

Unripe tomatoes are still green and should be stored stem side down in a cardboard box or brown paper bag. This will encourage ripening. Ripe tomatoes should be kept stem side up, at room temperature and away from sunlight. Eat them within a few days for best taste.

Light conditions have very little to do with ripening. Tomatoes do not require light to ripen and in fact, fruit exposed to direct sunlight will heat to levels that inhibit pigment synthesis. Direct sun can also lead to sunscald of fruit. Do not remove leaves in an effort to ripen fruit.

Standard-sized tomatoes take 20 to 30 days from blossom set to reach full size–commonly called “mature green”; they take another 20 to 30 days to ripen, that is begin to change color. A tomato can be picked when it begins to change color–from green to red, pink, yellow, or orange depending upon the cultivar.

Hang up whole plants. For most crops, it's best to hang whole plants — fruits to roots — upside down in a garage, mudroom, or other dry, frost-protected place. This promotes ripening even as plant vines and stems wither.

It seems counterintuitive, but direct sunlight is not needed to ripen tomatoes. In fact, tomatoes on the vine outdoors and exposed to direct sunlight can heat up which inhibits ripening or even causes sunscald.
