FOG is an acronym for Fats, Oils and Grease that are deposited into the sanitary sewer system. FOG comes from meat fats in cooking and food scraps, cooking oil, shortening, lard, butter and margarine, gravy, and food products such as mayonnaise, salad dressings, sour cream and other foods high in fat.

Fats, oils, and grease will build up in your pipes, create blockages and plug sewers, leading to problems such as: Raw sewage overflowing and backing up into your home, business, or a neighbouring property. Basement flooding (an expensive and unpleasant situation). Exposure to disease-causing organisms.

The objective of the FOG management program includes, but is not limited to: The minimization of the introduction of and/or removal of FOG and other soluble material associated with food preparation discharged to the city wastewater collection system.

Grease traps have been used since Victorian days: Nathaniel Whiting obtained the first patent in the late 1800s. The traps reduce the amount of fats, oils, greases, and solids (FOGS) that enter sewers. They consist of boxes within the drain run that flows between the sinks in a kitchen and the sewer system.

The National Pretreatment Program provides regulatory tools and authority to state and local POTW pretreatment programs for eliminating pollutant discharges that cause interference at POTWs, including interference caused by the discharge of Fats, Oils, and Grease (FOG) from food service establishments (FSE).

At the wastewater treatment plant, FOG removal traditionally involves the addition of biological additives to break down and consume grease buildup. This process, known as bioaugmentation, uses bacteria-forming enzymes to break the bond between glycerol and fatty acids.

Why are grease traps mandated? Most municipalities require food service establishments to a grease trap as a method of limiting the amount of greases and solids that are passed through their water treatment facilities to prevent harmful contaminants from entering their water system.
