Texture modification is when food is mashed or pureed to make it safer to eat. When people have problems with swallowing, or controlling food within their mouth, they may require a texture modified diet to reduce the risk of choking or aspiration (food or fluid going into the airway).

Abstract. Older people with dysphagia are at high risk of malnutrition. To maintain safe oral and nutritional intake, solid food may be texture-modified.

There are three main types of texture-modified diets that are typically prescribed to people with dysphagia: Coarsely minced / Easy-to-chew / Chopped. Finely minced / Soft and moist. Blended / Puree.

By choosing an altered consistency diet, you may experience these potential benefits: Eating finely chopped, pureed or commonly softened foods and/or drinking thickened liquids MAY make it easier to eat and drink. The risk of choking or aspirating MAY be minimized.

A texture modified diet is most commonly needed in Patients with stroke, progressive neurological disorders (motor neurone disease, Parkinson's disease), learning disabilities, elderly patients and some cancers or injury affecting the head and neck.

Because TMFs can make swallowing easier and potentially reduce the risk of choking or aspirating (inhaling food and water in the lungs), texture modified diets are often used to help people with dysphagia eat and drink safely.

The diet includes foods that are soft textured and moist, making them easy to swallow. Soft, well-cooked foods, well-moistened ground meats, moist and well-cooked potatoes, noodles, and dumplings are examples of foods that are the proper texture for this diet. All foods of a pureed consistency are allowed on this diet.
