What Is FOG? Grease trap FOG refers to fats, oils and greases. The compounds found in FOG are derived from vegetable, plant or animal sources and consist of triglyceride and glycerol.

A grease trap keeps harmful buildup away from the sewer line. The second reason for a grease trap is to benefit the municipal sewer system. The city doesn't want to deal with massive blockages in the sewer system because of businesses sending fats, grease, oil, and extra food waste into the sewer lines.

The National Pretreatment Program provides regulatory tools and authority to state and local POTW pretreatment programs for eliminating pollutant discharges that cause interference at POTWs, including interference caused by the discharge of Fats, Oils, and Grease (FOG) from food service establishments (FSE).

Why are grease traps mandated? Most municipalities require food service establishments to a grease trap as a method of limiting the amount of greases and solids that are passed through their water treatment facilities to prevent harmful contaminants from entering their water system.

Grease traps/interceptors shall be installed to receive the drainage from plumbing fixtures and equipment with grease-laden wastewater located in the FSEs such as restaurants, hotel kitchens, hospitals, school kitchens, cafeterias or clubs.
