Nisin, produced by certain strains of Lactococcus lactis, is a natural antimicrobial peptide exhibiting broad-spectrum antimicrobial activity against a majority of Gram-positive foodborne bacteria and some Gram-negative pathogens when combined with EDTA or physical treatments (Gharsallaoui et al., 2015).

Lactic Acid Bacteria (LAB) isolated from several traditional fermented foods such as “tempeh”, “tempoyak” and “tapai” were screened for the production of bacteriocin. One strain isolated from “tempeh” gives an inhibitory activity against several LAB. The strain was later identified as Lactobacillus plantarum BS2.

Historically, four species of lactic acid bacteria (LAB) have been identified as organisms that are present in sauerkraut fermentations: Leuconostoc mesenteroides, Lactobacillus brevis, Pediococcus pentosaceus, and Lactobacillus plantarum.

Lactic acid bacteria are a kind of microorganisms that can ferment carbohydrates to produce lactic acid, and are currently widely used in the fermented food industry.

Kimchi is made through lactic acid fermentation of cabbage at low temperatures to ensure proper ripening and preservation.

Nowadays, probiotics are consumed to inhibit pathogens and increase shelf life of foods. They release antimicrobial compounds (such as lactic acid, bacteriocin and hydrogen peroxide) and compete with pathogens that lead to increase the immune response of the host (1).

Its beneficial effect may be associated to its ability to inhibit the growth of pathogens, apparently by the secretion of antibacterial substances including lactic acid, hydrogen peroxide and etc. (12).

Lactic acid bacteria can produce antimicrobial agents that exert strong antagonistic activity against many microorganisms, including pathogenic and spoilage microorganisms.
