Sizing a Grease Trap* Commercial grease traps are sized according to the rate of incoming flow, in gallons per minute (GPM). Associated with this incoming flow rate is the trap's capacity. This rated capacity, in pounds, is listed at twice the flow rate. For example, a 10 GPM trap has a rated capacity of 20 pounds.

If you choose a two-minute drainage period, for a 2 pipe you would need a grease trap rated for 10 gpm. The UPC code also states that the total capacity in gallons of fixtures discharging into this particular grease trap (10 gpm) must not exceed two and one-half times the certified flow rate (gpm) of the grease trap.
