Causes include dehydration, smoking and exposure to radiation. Most salivary tumors are noncancerous, and small blockages may pass without treatment. Severe cases may require the removal of a salivary gland.

The parotid glands contribute a watery, proteinaceous secretion to whole saliva. The major protein components of parotid saliva are amylase, the leucine-rich parotid secretory protein (PSP), and proline-rich proteins (PRPs), in addition to multiple minor components (Wallach et al., 1975).

Parotitis is a painful swelling of your parotid glands, which are salivary glands located between the ear and jaw. The most common cause is a virus, such as mumps, herpes, or Epstein-Barr. Bacterial infections, diabetes, tumours or stones in the saliva glands, and tooth problems also may cause parotitis.

Sympathetic and parasympathetic fibers innervate the parotid gland. Sympathetic innervation causes vasoconstriction, and parasympathetic innervation, from the glossopharyngeal nerve (CN IX), produces the secretion of saliva.

Salivary infection, also called sialadenitis, most commonly affects the parotid salivary glands on the side of the face, near the ears or the submandibular salivary glands under the jaw.

Inflammation of one or both parotid glands is known as parotitis. The most common cause of parotitis is mumps. Widespread vaccination against mumps has markedly reduced the incidence of mumps parotitis. The pain of mumps is due to the swelling of the gland within its fibrous capsule.

Upon stimulation, the parotid glands are responsible for at least 50% of the total volume of saliva from the mouth. Sublingual glands contribute to a small percentage, both in the unstimulated or stimulated states of the salivary glands.
