To add fillable fields to your PDF document, click the Add Fillable Fields tab on the right and select the type of content you need. You can add fields for signatures, text, images, date and etc. When you're done with embedding fields into your PDF, click the Done button.

To make a document un-editable, first, select all the text in the document by pressing Ctrl+A. Once all of the text is highlighted, click Restrict Editing in the Protect group on the Developer tab.

Click File > Info > Protect Document and select Restrict Editing. Your document then displays a Restrict Editing pane on the right-hand side of the document for formatting and editing restrictions. Here, you can give people permission to read your document, select what parts they can edit, and choose how they do it.
