Ctrl-click on the text in your TOC that you want to remove to go to that text in the document. Change the style of that text from one that is used for TOC reference. (i.e. you do not want a Heading style.) You can have the formatting look the same if you want, but the style must be different.

Word does not automatically update the Table of Contents as you type, but if you make changes to your document and need to update the Table, you can do this quickly by selecting/highlighting your Table of Contents, and then going to the "References" tab on the menu and clicking the "Update Table" button next to "Table

I've had this before and have usually been able to fix it by doing Ctrl+click on the page number to go the heading that isn't behaving, pressing Enter a few times at the beginning of the text for that section, creating a new heading with the same text on one of the new lines, applying the appropriate heading style,

Insert a page number with table of contents formatting at the bottom of the table of contents page. Put your cursor in the table of contents page and press view / header footer / and then choose footer. Insert / page number / format / change the type of number to "i ii iii" and change to start at 1.
