On the Insert tab, in the Text group, click Text Box, click anywhere near the picture, and then type your text. To change the font or style of the text, highlight the text, right-click it, and then select the text formatting you want on the shortcut menu.

Identify the toolbox in the illustrator menu and click on it. A list of commands will pop up once you click, click the tool type option. The tool type will direct the cursor to the text on the logo. You will then be able to delete/change and add the text that you want.

Font size should be minimum 16pt, but if you use a smaller font size, make sure that you have significantly contrasting colour and use more line spacing. Don't choose values below 12pt, unless you're using them in an UPPERCASE format. In that case, don't go under 10pt.
