When you have the file open in Excel, go to File -> Info. The screen should now show the properties near the top right of the screen. Click on the Title text and change to what you want.

Click the chart, and then click the Chart Design tab. Click Add Chart Element > Chart Title, and then click the title option that you want. Type the title in the Chart Title box. To format the title, select the text in the title box, and then on the Home tab, under Font, select the formatting that you want.

Titles aren't just for file names. In Excel, you can use titles to start off a page of your work, or even directly on a chart embedded within that spreadsheet. Like everything else in Excel, titles are completely customizable, including where you place them and how you shift your data to include them.

Click inside the left, center or right "Click to add header" box and type the title of the spreadsheet. You can display the page number or total number of pages in any of the header boxes by clicking "Page Number" or "Number of Pages" in the Header and Footer Elements group.

To unhide the ribbon temporarily, click at the very top of your workbook. To get the ribbon back permanently, click the Ribbon Display Options button in the top-right corner and choose the Show Tabs and Commands option. This will show the ribbon in the default full view with all the tabs and commands.
